What is Saffron

Saffron is the most expensive spice in the world! It is produced from the saffron crocus flower (Crocus sativus),Each flower contains three stigmas. It is actually the dried stigmas (which are the insides of a flower that catch pollen) and has a deep auburn colour and sweet flavour. The stigmas can only be picked by hand as machines are not delicate enough.Each red stigma is like a little capsule that encloses the complex chemicals that make up saffron’s aroma, flavor, and yellow dye. It takes 250,000 stigmas to make just half a kilo of saffron, hence its high price, however you only need a pinch as it is very strong.In order to release Safron chemicals, you must steep the threads or Powdered the saffron to have efficient result.
Saffron has been used as a herbal medicine for over 3,000 years.

Saffron Grades

standards are prescribed under the ISO 3632 :
Grade 1 : Is called Sargol (Iranian) or Coupe (European)
Grade 2 : Is called Pushal (Iranian) or Mancha (European)
Other grades 3 & 4 also exist but are very poor.
Quality is determined by color, aroma, and flavor. Colouris the leading indicator as the other compounds tend to occur in proportion.

Top quality saffron will consist of 100% red stigmas with no yellow threads.
